This may be one of the most versatile treats there is. You can make it with chia seed pudding, as is here, with mousse, with classic rich dutch chocolate pudding, or store bought packets, with homemade gummies, homemade biscuit/cookie crumbles, or pre-made. Really whatever balance will bring you joy is the one to go with.
It's simply pudding/custard/mousse on the bottom, cookie crumbles as "dirt" on top, and gummy worms strewn about.
Here, I used pre-made chocolate biscuit cookies, Annie's Chocolate Bunny Grahams. They are a snack I know our little one will eat as you only need a few cookies for the crumbs/dirt. If you'd like to make your own crisp chocolate cookies click here for an excellent recipe.
To make the Gummy Worms, really all you need is a worm mold, such as this, and our Homemade Gummy Recipe. Here I strained them to be free of any pulp and used turmeric pineapple juice, strawberry juice, and then elderberry. I love making our own gummies because they are fun and really delicious. That being said, if the thought of doing so is just too much, there are countless happy gummies at the store.
I want to share ideas that may be joyful and of use, yet never stressful feeling. There are moments as a mom I make each step from scratch, and moments I pop a frozen pizza in the oven, and both times are wonderful. Nourishment is more than just vitamins in a dish, it's who and how we are in our hearts, the moments I do less are often moments my heart is most full, and the moments I have the time and desire to do more, are also so sweet. Just know that.
For the Date Sweetened Chocolate Chia Seed Pudding you'll need:
5-6 dates (soak in a bit of hot water to soften for about 15 min)
2-3 tbsp unsweetened coco
2 cups milk of choice (we use almond)
Dash vanilla extract
3-4 tbsp chia seeds
Place the softened dates in a blender and wiz up until a smooth paste. Then add in coco and vanilla, wiz, add in milk, wiz, then chia seeds, wiz for the briefest moment, pour into cups of choice and refrigerate for 3-4 hours or overnight.
Makes 4 1/2 cup or 4oz servings.
To be sweeter add more dates, to be more intense more cocoa.
